Cashew Spreads
Ingredients
1 cup raw cashews (soaked for 1hr in hot water)
¼ cup filtered water
¼ cup nutritional yeast
2 Tbs. lemon juice
2 cloves garlic
1 Tbs. un-pasturized apple cider vinegar
1 Tbs. dijon mustard
pinch of sea salt
Method
Drain the cashews after soaking for at least 1 hour in hot water. Place in blender and add in all the other ingredients. Blend together for 3 minutes until completely smooth. Taste and if it needs more of a kick, you can opt to add some cayenne pepper or 1 extra spoon of apple cider vinegar. Enjoy as spread with some crudités or bread.
