Quinoa stir-fry
Ingredients
1/2 cup cooked quinoa (check out the amazing benefits of Quinoa by the cooking detective)
1/3 cup sun dried tomatoes (home made are preferable and this can be made with fresh plum tomatoes too)
1 cup green vegetables of choice
1/3 cup pan braised tofu with onions
pinch of sea salt
1 tsp coconut oil
1 spoon nutritional yeast (optional)
Method
Heat a skillet and add all the ingredients in with the teaspoon of coconut oil (do not let the oil reach heating point so add it with everything else and stir fry for about 3 minutes (longer if the food was refrigerated)
