Mac and Cheese

Ingredients

500g Macaroni (GF option available)
1 butternut
1 cup broccoli
4 Tbsp. nutritional yeast
1/2 cup unsweetened almond milk
sea salt
black pepper
1 spoon coconut oil

Method

Peel, slice and roast the butternut squash
Boil the broccoli until soft but not overcooked
Once the butternut is cooked, place in a blender with nutritional yeast, salt, coconut oil and almond milk. Once creamy set aside. Cook pasta as per packaging instructions
Once cooked, drain and add the “cheesy” mix. Then place in an oven dish and add broccoli on top.

Place in the oven at 180/200 degree (fan setting) and cook for 15 min or till golden on top
