2 ripe bananas (as egg replacement)
3 tbsp cacao powder
6 tbsp Buckwheat or Rice flour
2 tbsp vanilla essence (liquid)
1 tbsp instant coffee
1 tbs coconut oil (melted)
1 tsp GF baking powder
250g coconut cream
Plant based milk (as needed)
70g OmBar chocolate (Mylk or 60%)
1 cup maple (optional, i did not use it as i found the bananas sweet enough)
Set the oven at 150 degrees celsius.
Blend 2 bananas in the food processor
Add some coconut cream to make the consistency a little more liquid
Add cacao, flour and baking powder and mix well, until completely smooth
Add the coconut oil and feel free to add some plant based milk if the consistency is too hard.
Add maple if desired.
In order to be fudgy, the consistency of the batter needs to be not too liquid but also not dough (creamy , not too runny)
Add in baking tray (i used baking paper to avoid adding more oil)
Add the OmBar pieces in the batter once in the tray and put in the oven for 30 to 40 min.
Prick the brownie with a wooden stick to see if ready.
