250g wholesome spelt spaghetti (or brown rice spaghetti GF*)
2 cups basil, packed
1/2 cup pine nuts (option is to roast them a little)
1/4 cup cashew nuts
4-6 cloves of garlic, minced
1 tsp coarse sea salt
1/2 cup good-quality olive oil
2 tsp fresh lemon juice
Set a pot of water with a pinch of salt to boil
Meanwhile, start preparing the pesto by rinsing and chopping the basil and mixing all the ingredients together in a blender until smooth.
Once the water is boiling, add the pasta of choice and let it cook until “al dente”; then drain and mix with the pesto sauce.
Voila, dinner is served!
